- 1/2 cup shredded cheddar cheese

Instructions
- Preheat your skillet over medium heat to ensure an even, golden crust.
- Spread butter generously on one side of each slice of sourdough bread.
- Place the bread, buttered side down, on the skillet and layer with mozzarella, cheddar, and Parmesan cheeses.
- Spread a tablespoon of pesto over the cheese, and add tomato slices if using.
- Top with the remaining slice of bread, buttered side up.
- Grill each side for about 3-4 minutes, or until the bread is golden brown and the cheese is melted to perfection.
- Remove from heat, let it cool slightly, and then cut into halves or quarters for serving.
