Ingredients

  • 4 slices of sourdough bread
  • 1 cup shredded mozzarella cheese
  • 8 slices of pepperoni
  • 1/2 cup pizza sauce
  • 2 tablespoons butter, softened
  • 1/4 teaspoon dried oregano (optional)
  • 1/4 teaspoon garlic powder (optional)

Feel free to substitute with whole wheat or gluten-free bread if preferred, and add your favorite toppings like olives, mushrooms, or bell peppers for a personalized touch.

Instructions

  1. Spread a generous layer of softened butter on one side of each slice of bread. This will ensure a perfectly golden, crispy crust, much like the tortillas my abuela and I used to make.
  2. Place two slices of bread, buttered side down, on a cutting board. Spread 1/4 cup of pizza sauce on the unbuttered side of each slice.
  3. Sprinkle 1/2 cup of mozzarella cheese over the sauce on each slice, then layer with four slices of pepperoni. Add a sprinkle of oregano and garlic powder if using.
  4. Top with the remaining slices of bread, buttered side up, to form your sandwiches.
  5. Heat a large skillet over medium heat. Once hot, carefully place the sandwiches in the skillet.
  6. Cook for 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted. This part always reminds me of my grandmother’s patience when making perfect tortillas.
