Ingredients

  • 4 bone-in pork chops
  • 4 large russet potatoes, thinly sliced
  • 1 onion, thinly sliced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or cooking spray.
  2. In a large skillet, heat olive oil over medium-high heat. Season the pork chops with salt, pepper, and paprika, then sear them on both sides until golden brown, about 3-4 minutes per side. Remove from the skillet and set aside.
  3. In the same skillet, add butter and let it melt. Stir in flour and cook for about 1 minute until lightly browned, creating a roux that will thicken your sauce.
  4. Gradually whisk in milk, continuing to stir until the mixture thickens and becomes smooth. Add cheddar cheese, garlic powder, salt, and pepper, stirring until the cheese has melted into a creamy sauce.
  5. Layer half of the sliced potatoes and onions in the prepared baking dish. Pour half of the cheese sauce over the potatoes, spreading it evenly.
  6. Repeat with the remaining potatoes, onions, and cheese sauce. Place the seared pork chops on top.
  7. Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.
  8. Garnish with fresh parsley before serving, if desired.
