Ingredients
Here’s what you’ll need to create this delicious bread:
- 3 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/2 cup milk, warmed
- 1/2 cup pumpkin puree
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 1/2 cup brown sugar
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- Optional: 1/2 cup chopped pecans or walnuts for added crunch
Feel free to substitute almond milk for regular milk or add a handful of raisins for an extra touch of sweetness. This recipe is all about making it your own, just like my abuela would have encouraged.
Instructions
- In a small bowl, combine the warm milk and yeast. Let it sit for about 5 minutes until it becomes frothy.
- In a large mixing bowl, combine the flour, granulated sugar, and salt. Make a well in the center and add the yeast mixture, pumpkin puree, melted butter, and vanilla extract.
- Mix until a dough begins to form. Transfer to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. My grandmother always said you know it’s ready when it feels like a soft pillow beneath your hands.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about an hour, or until doubled in size.
- Once risen, punch down the dough and roll it out into a large rectangle, approximately 12×20 inches.
- In a small bowl, mix together the brown sugar, cinnamon, nutmeg, and cloves. Sprinkle the mixture evenly over the rolled-out dough, leaving a little space around the edges.
- Roll the dough tightly from one long side to the other, then cut into slices about 1 inch thick.
- Layer the slices in a greased loaf pan, cut side up, and cover again with the damp cloth. Let rise for another 30 minutes while you preheat the oven to 350°F.
- Bake for 30-35 minutes, or until the top is golden brown and the edges are firm. The smell will transport you to a cozy autumn day.
- Allow to cool slightly before serving. The pull-apart texture makes it perfect for sharing over a cup of coffee or tea.
