Total Time:45 minutes
Yield:4 servings
Ingredients
1 cup canned pumpkin puree
1/2 cup granulated sugar
1/4 cup light brown sugar, packed
1 teaspoon vanilla extract
1/2 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/2 cup milk
1/4 cup unsalted butter, melted
1 cup chopped pecans
1/2 cup boiling water
Instructions
Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, and vanilla extract. Stir until the mixture is smooth.
In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, ginger, and salt. Gradually add this dry mixture to the pumpkin mixture, alternating with the milk, stirring until just combined.
Pour the melted butter into the prepared baking dish, ensuring it coats the bottom evenly. Carefully spoon the pumpkin mixture over the butter, but do not stir.
Sprinkle the chopped pecans evenly over the top of the pumpkin mixture.
Pour the boiling water over the entire mixture. Again, do not stir. This will create a luscious sauce as it bakes.
Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Allow the cobbler to cool slightly before serving, as it will be quite hot. Enjoy the aroma that fills your kitchen — it’s the smell of fall.
