Feel free to substitute vegetable oil with melted coconut oil for a subtle flavor twist, or use almond flour for a gluten-free version.
Instructions
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg. Set aside.
- In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, and vegetable oil. Mix until well blended.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and cooled coffee.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing to keep the cupcakes tender.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat the softened butter in a large bowl until creamy. Gradually add the powdered sugar, one cup at a time, mixing well after each addition.
