Learn how to make delicious Pumpkin Spice Latte Cupcakes. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • 1 cup canned pumpkin puree
  • ¾ cup granulated sugar
  • ½ cup brown sugar, packed
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup brewed coffee, cooled

For the frosting:

  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Feel free to substitute vegetable oil with melted coconut oil for a subtle flavor twist, or use almond flour for a gluten-free version.

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg. Set aside.
  3. In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, and vegetable oil. Mix until well blended.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and cooled coffee.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing to keep the cupcakes tender.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. For the frosting, beat the softened butter in a large bowl until creamy. Gradually add the powdered sugar, one cup at a time, mixing well after each addition.
  9. Add the brewed coffee, vanilla extract, and cinnamon, and beat until the frosting is smooth and fluffy.
  10. Once the cupcakes are completely cool, frost them generously and enjoy your homemade Pumpkin Spice Latte Cupcakes!
