Ingredients
- 12 ounces of spaghetti
- 1/3 cup extra-virgin olive oil
- 8 cloves of garlic, thinly sliced
- 1/4 teaspoon red pepper flakes (optional for a bit of heat)
- Salt, to taste
- Freshly cracked black pepper, to taste
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Lemon zest from one lemon for added freshness
Feel free to make substitutions based on your preferences or what’s available in your pantry. If you prefer a milder flavor, reduce the garlic by half, or substitute with shallots for a sweeter taste. For a gluten-free option, use your favorite gluten-free pasta.
Instructions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente, usually 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and sauté until golden and fragrant, about 2-3 minutes. Be careful not to burn the garlic as it can turn bitter.
- Stir in the red pepper flakes, if using, and continue to cook for another minute, allowing the flavors to meld.
- Reserve 1 cup of pasta water and then drain the spaghetti. Add the drained spaghetti to the skillet with the garlic and oil, tossing to coat.
- Add reserved pasta water as needed to achieve your desired sauce consistency. Season with salt and freshly cracked black pepper to taste.
- Remove from heat and stir in the Parmesan cheese, allowing it to melt into the pasta. Toss in the fresh parsley and lemon zest for a pop of color and freshness.
- Serve immediately, garnished with additional Parmesan cheese if desired.
