  • Freshly cracked black pepper, to taste
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Lemon zest from one lemon for added freshness

Feel free to make substitutions based on your preferences or what’s available in your pantry. If you prefer a milder flavor, reduce the garlic by half, or substitute with shallots for a sweeter taste. For a gluten-free option, use your favorite gluten-free pasta.

Instructions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente, usually 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and sauté until golden and fragrant, about 2-3 minutes. Be careful not to burn the garlic as it can turn bitter.
  3. Stir in the red pepper flakes, if using, and continue to cook for another minute, allowing the flavors to meld.
  4. Reserve 1 cup of pasta water and then drain the spaghetti. Add the drained spaghetti to the skillet with the garlic and oil, tossing to coat.
  5. Add reserved pasta water as needed to achieve your desired sauce consistency. Season with salt and freshly cracked black pepper to taste.
  6. Remove from heat and stir in the Parmesan cheese, allowing it to melt into the pasta. Toss in the fresh parsley and lemon zest for a pop of color and freshness.
  7. Serve immediately, garnished with additional Parmesan cheese if desired.
