- 2 cups shredded cooked chicken (rotisserie chicken works great!)
- 1 packet ranch seasoning mix
- 2 cups cooked macaroni and cheese
- 1 can refrigerated biscuit dough
- 1 cup shredded cheddar cheese
- 1/2 cup buttermilk
- 1/4 cup melted butter
- 1 cup waffle mix
- 1/4 cup chopped chives (optional for garnish)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F. Line a baking sheet with parchment paper.
- In a large bowl, mix the shredded chicken with the ranch seasoning. Ensure each piece is well-coated.
- On a floured surface, roll out each biscuit dough piece into a flat circle. Place a spoonful of macaroni and cheese in the center, followed by a sprinkle of shredded cheddar cheese.
- Fold the biscuit dough over the filling, pinching the edges to seal them. Place each stuffed biscuit seam-side down on the prepared baking sheet.
- Bake in the preheated oven for about 15-18 minutes or until golden brown.
- While the biscuits are baking, prepare the waffle mix by combining the waffle mix with buttermilk and melted butter. Whisk until smooth.
- Heat your waffle iron and pour a ladle of the waffle batter, cooking until golden brown and crispy.
- To assemble, place a waffle on the plate, top with a stuffed biscuit, and drizzle with any remaining ranch seasoning. Garnish with chopped chives if desired.
