Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (optional for a bit of heat)
- 2 cups sharp cheddar cheese, grated
- 1/2 cup unsalted butter, softened
- 1 cup Rice Krispies cereal
Feel free to experiment with the cheese! I sometimes swap out half of the cheddar for pepper jack to add a spicy twist, which my husband Marco absolutely loves. And if you’re looking for a gluten-free option, simply substitute the all-purpose flour with a gluten-free blend.
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, salt, and cayenne pepper.
- In a large mixing bowl, cream the softened butter until smooth. Add the grated cheddar cheese and continue to mix until well combined.
- Gradually add the dry ingredients to the cheese mixture, stirring until you have a smooth dough.
- Gently fold in the Rice Krispies cereal, being careful not to crush them too much.
- Divide the dough into small balls, about the size of a walnut, and place them on the prepared baking sheet. Flatten each ball slightly with the palm of your hand.
- Bake for 12-15 minutes, or until the edges are golden and the crackers are firm to the touch. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack.
