Ingredients
Gathering your ingredients is the first step to any successful baking adventure. Here’s what you’ll need:
- 3 ½ cups all-purpose flour
- 1 ½ teaspoons salt
- 1 tablespoon sugar
- 2 ¼ teaspoons active dry yeast (1 packet)
- 1 ½ cups warm water (about 110°F)
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh rosemary (or 1 teaspoon dried rosemary)
- ½ cup grated parmesan cheese
- Optional: extra rosemary and parmesan for topping
If you’re missing fresh rosemary, dried works just as well, and if you’re feeling adventurous, you can substitute parmesan with another hard cheese like asiago or pecorino. The key is to follow your senses, much like my grandmother did, and adjust to your taste.
Instructions
Let’s dive into the process of making your own Rustic Rosemary Parmesan Bread. I promise, it’s simpler than you might think!
- In a large mixing bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for about 5 minutes until it becomes foamy.
- Add the olive oil, salt, chopped rosemary, and grated parmesan to the yeast mixture. Stir until combined.
- Gradually add the flour, one cup at a time, mixing until a dough begins to form. You may need to use your hands as the dough comes together.
- Turn the dough onto a lightly floured surface and knead for about 8-10 minutes, or until it’s smooth and elastic. This step always brings me back to those afternoons with my abuela, teaching me the rhythm of baking.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
- Preheat your oven to 375°F. Punch down the dough and shape it into a round loaf. Place it on a parchment-lined baking sheet.
- If desired, sprinkle some additional rosemary and parmesan on top. Use a sharp knife to make a few slashes on the surface of the bread.
- Bake for 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom. Let it cool on a wire rack before slicing.
