Ingredients

  • 2 cups jasmine rice
  • 4 salmon fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 lime, zested and juiced
  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 cup edamame, shelled
  • 1 avocado, sliced
  • 1/4 cup green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. Cook according to package instructions and keep warm.
  2. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil and season with salt and black pepper.
  4. In a small bowl, combine minced garlic, lime zest, lime juice, soy sauce, honey, and sesame oil. Pour over the salmon, ensuring each fillet is well coated.
  5. Bake the salmon for 12-15 minutes, or until it flakes easily with a fork. As it bakes, the sweet, tangy aroma will fill your kitchen, reminiscent of the lively meals from my past.
  6. While the salmon is baking, blanch the edamame in boiling water for 3-4 minutes. Drain and set aside.
