Ingredients
2 cups jasmine rice
4 salmon fillets (about 6 ounces each)
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 cloves garlic, minced
1 lime, zested and juiced
1/4 cup soy sauce
1 tablespoon honey
1 tablespoon sesame oil
1 cup edamame, shelled
1 avocado, sliced
1/4 cup green onions, chopped
1 tablespoon sesame seeds
Instructions
Rinse the jasmine rice under cold water until the water runs clear. Cook according to package instructions and keep warm.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil and season with salt and black pepper.
In a small bowl, combine minced garlic, lime zest, lime juice, soy sauce, honey, and sesame oil. Pour over the salmon, ensuring each fillet is well coated.
