Ingredients

Gathering the right ingredients is the first step towards culinary magic. Here’s what you’ll need:

  • 1 wheel of brie cheese (about 8 ounces)
  • 1/2 pound of sausage (Italian or chorizo work well)
  • 1 sheet of puff pastry, thawed
  • 1 tablespoon of olive oil
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of fresh thyme leaves
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste

If you’re looking for substitutes, ground turkey or vegetarian sausage can easily replace the meat, and a whole wheat pastry can serve as a healthier alternative to puff pastry. As my abuela taught me, flexibility in the kitchen can lead to delightful surprises!

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat. Add chopped onions and garlic, sautéing until translucent and fragrant, about 3-4 minutes.
  3. Add the sausage to the skillet, breaking it up with a spoon as it cooks. Cook until the sausage is browned and fully cooked, about 5-7 minutes. Stir in fresh thyme, salt, and pepper. Remove from heat and let cool slightly.
  4. On a floured surface, roll out the puff pastry to smoothen and slightly enlarge it. Place the brie wheel in the center of the pastry.
  5. Spoon the sausage mixture over the top of the brie, spreading it evenly.
  6. Fold the pastry over the brie, gently pressing to seal. Brush the pastry with the beaten egg to enhance its golden appearance when baked.
  7. Transfer to the prepared baking sheet and bake for 20-25 minutes, or until the pastry is golden brown and crispy.
  8. Allow to cool for a few minutes before serving to prevent the cheese from oozing out too quickly.
