Ingredients
- 1 pound boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 whole wheat pitas
- 1 cup plain Greek yogurt
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh parsley
- 1 teaspoon chopped fresh chives
- 1/4 teaspoon onion powder
- 2 cups shredded cabbage
- 1/2 cup shredded carrots
- Optional: sliced cucumber and cherry tomatoes for garnish
Feel free to substitute chicken breasts if you prefer them, and if you’re short on time, a store-bought ranch dressing can replace the homemade herb ranch. However, I find there’s something special about making it from scratch — a little nod to my abuela’s way of cooking with love and patience.
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the chicken thighs, olive oil, paprika, garlic powder, salt, and black pepper. Toss until the chicken is well coated.
- Arrange the seasoned chicken thighs on the prepared baking sheet in a single layer. Bake for 20-25 minutes, or until the chicken is cooked through and golden brown.
- While the chicken is baking, prepare the fresh herb ranch slaw. In a medium bowl, mix together the Greek yogurt, lemon juice, dill, parsley, chives, and onion powder. Season to taste with additional salt and pepper if needed.
- Add the shredded cabbage and carrots to the ranch dressing, tossing to combine.
- Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.
- Warm the pitas in the oven for a few minutes, then cut them in half and gently open each pocket.
- Stuff each pita half with sliced chicken, a generous portion of herb ranch slaw, and optional garnishes like cucumber slices and cherry tomatoes.
