2 pounds of beef chuck, cut into 1-inch cubes
3 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
4 carrots, sliced
3 potatoes, diced
2 cups beef broth
1 cup red wine (optional, can substitute with more beef broth)
2 tablespoons tomato paste
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
2 bay leaves
1 tablespoon flour (for thickening, if desired)
Instructions
Start by heating 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the beef in batches, browning on all sides. This step seals in the flavor and is well worth the few extra minutes.
Transfer the browned beef to your slow cooker. In the same skillet, add the remaining olive oil and sauté the onion until translucent, about 5 minutes.

Stir in the tomato paste, thyme, and rosemary, cooking for another minute to bring out their flavors.
