Ingredients

  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt

  • 4 cups beef broth
  • 1 cup red wine (optional for richer flavor)
  • 3 medium potatoes, peeled and diced
  • 4 carrots, peeled and sliced
  • 3 stalks celery, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 tablespoon Worcestershire sauce
  • 1 cup frozen peas
  • Chopped fresh parsley for garnish

Instructions

  1. Begin by tossing the beef stew meat with flour, salt, and pepper in a large bowl until evenly coated.
  2. In a large skillet, heat olive oil over medium-high heat. Add the beef in batches, searing until browned on all sides. This step seals in the flavor, much like I learned from my grandmother’s way of browning meat for her famous enchiladas.
  3. Transfer the browned beef to your slow cooker. Add beef broth, red wine (if using), potatoes, carrots, celery, onion, garlic, tomato paste, thyme, rosemary, bay leaves, and Worcestershire sauce.
  4. Stir everything together, making sure the beef is submerged in the liquid. Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the beef is tender and the flavors are well melded.
  5. About 30 minutes before serving, add the frozen peas to the slow cooker. They’ll cook quickly and add a lovely pop of color and sweetness.
  6. Before serving, remove the bay leaves. Taste and adjust seasoning as necessary. Garnish with fresh parsley for a touch of brightness.
