Ingredients
- 1 pound ground beef (or turkey for a leaner option)
- 1 packet taco seasoning (or homemade for extra freshness)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes with green chilies
- 2 cups shredded cheddar cheese
- 8 small corn tortillas, cut into strips
- 1 cup salsa
- 1/2 cup sour cream
- 1/4 cup chopped cilantro (optional, for garnish)
Feel free to substitute any of these ingredients to match your taste or dietary preferences. For instance, swap ground beef for chicken or use a dairy-free cheese to fit your needs.
Instructions
- Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
- Stir in the taco seasoning and a splash of water to coat the meat well. Let it simmer for a few minutes to enhance the flavors.
- In your slow cooker, layer half of the tortilla strips on the bottom.
- Top with half of the cooked beef, black beans, corn, diced tomatoes, and salsa.
- Repeat the layering process, finishing with a generous layer of shredded cheese on top.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the cheese is melted and bubbly.
- Once done, let it cool for a few minutes before serving. Top with a dollop of sour cream and sprinkle with cilantro if desired.
This method allows the flavors to meld together beautifully, resulting in a dish that’s both hearty and satisfying. Remember, patience is key — a lesson I learned stirring pots with my abuela.
