Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and finely chopped
  • 1 can (14 oz) diced tomatoes, drained
  • 1/2 cup chicken broth
  • 1 tablespoon chipotle in adobo sauce, finely chopped
  • 1/2 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • Fresh cilantro, chopped (for garnish)
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and season with smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes. Remove chicken from the skillet and set aside.
  2. In the same skillet, add the diced onion and cook until translucent, about 3 minutes. Stir in the garlic and jalapeño, cooking for another minute until fragrant.
  3. Add the diced tomatoes, chicken broth, and chipotle in adobo sauce to the skillet. Stir well, scraping up any browned bits from the bottom of the pan.
  4. Bring the mixture to a simmer and let it cook for about 5 minutes to allow the flavors to mingle.
  5. Lower the heat and stir in the heavy cream, allowing the sauce to thicken slightly. Return the cooked chicken to the skillet, stirring to coat the pieces in the creamy, spicy sauce.
  6. Sprinkle the shredded Monterey Jack cheese over the top, cover the skillet, and let it sit for a couple of minutes until the cheese melts beautifully into the sauce.
  7. Before serving, squeeze fresh lime juice over the dish and garnish with chopped cilantro. Serve hot and enjoy!
