Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 pound andouille sausage, sliced
  • 1/2 pound lump crab meat
  • 1 cup shredded mozzarella cheese
  • 1/4 cup diced green onions
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon Cajun seasoning (or to taste)
  • 1 tablespoon olive oil
  • Optional: hot sauce for serving

Feel free to substitute the andouille sausage with chorizo for a spicier kick, or swap the mozzarella for a sharper cheese if you prefer. Cooking should be as flexible as it is flavorful!

Instructions

  1. Preheat your waffle iron and lightly grease it with cooking spray or a dab of melted butter.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Create a well in the center.
  3. In a separate bowl, mix the buttermilk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing to keep the waffles light.
  4. Pour the batter onto the preheated waffle iron, spreading it evenly. Cook until the waffles are golden brown and crisp, approximately 5 minutes. Set aside.
  5. In a skillet over medium heat, add olive oil and cook the sausage slices until browned and cooked through, about 5-7 minutes.
  6. Add the crab meat to the skillet, along with the Cajun seasoning. Stir gently to combine and heat through for another 3 minutes.
  7. Preheat your oven to 375°F. Place the cooked waffles on a baking sheet lined with parchment paper.
  8. Top each waffle with a generous amount of the sausage and crab mixture, then sprinkle with mozzarella cheese.
  9. Bake in the oven until the cheese is melted and bubbly, about 8-10 minutes.
  10. Remove from the oven and garnish with green onions and parsley. Serve immediately with a dash of hot sauce if desired.
