- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1/2 pound andouille sausage, sliced
- 1/2 pound lump crab meat
- 1 cup shredded mozzarella cheese
- 1/4 cup diced green onions
- 1/4 cup chopped fresh parsley
- 1 teaspoon Cajun seasoning (or to taste)
- 1 tablespoon olive oil
- Optional: hot sauce for serving
Feel free to substitute the andouille sausage with chorizo for a spicier kick, or swap the mozzarella for a sharper cheese if you prefer. Cooking should be as flexible as it is flavorful!
Instructions
- Preheat your waffle iron and lightly grease it with cooking spray or a dab of melted butter.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Create a well in the center.
- In a separate bowl, mix the buttermilk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing to keep the waffles light.
- Pour the batter onto the preheated waffle iron, spreading it evenly. Cook until the waffles are golden brown and crisp, approximately 5 minutes. Set aside.
- In a skillet over medium heat, add olive oil and cook the sausage slices until browned and cooked through, about 5-7 minutes.
- Add the crab meat to the skillet, along with the Cajun seasoning. Stir gently to combine and heat through for another 3 minutes.
- Preheat your oven to 375°F. Place the cooked waffles on a baking sheet lined with parchment paper.
- Top each waffle with a generous amount of the sausage and crab mixture, then sprinkle with mozzarella cheese.
- Bake in the oven until the cheese is melted and bubbly, about 8-10 minutes.
- Remove from the oven and garnish with green onions and parsley. Serve immediately with a dash of hot sauce if desired.
