- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh parsley for garnish

Instructions
- Preheat your oven to 350°F (175°C). Grease a large baking dish with a bit of olive oil.
- Season the pork chops with salt and pepper on both sides. In a large skillet over medium-high heat, heat the olive oil and brown the pork chops for about 3-4 minutes on each side. Set aside.
- In the same skillet, reduce the heat to medium and melt the butter. Add the sliced onions and garlic, cooking until the onions are translucent, about 5 minutes.
- Stir in the flour and cook for another minute, ensuring it’s well combined with the onions and garlic.
- Gradually whisk in the milk and chicken broth, stirring constantly until the mixture thickens, around 5 minutes.
- Add the thyme and paprika, and adjust the seasoning with more salt and pepper if needed.
- Layer the sliced potatoes evenly in the prepared baking dish. Pour half of the creamy sauce over the potatoes, spreading it evenly.
- Place the pork chops on top of the potatoes. Pour the remaining sauce over the chops, making sure everything is well coated.
- Sprinkle the cheddar cheese over the top and cover the dish with aluminum foil.
- Bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly and golden brown.
- Let it cool for a few minutes before garnishing with fresh parsley. Serve warm and enjoy the comforting flavors!
