Ingredients
4 large russet potatoes
2 tablespoons olive oil
1 pound shrimp, peeled and deveined
1/2 pound crab meat, picked over for shells
1/4 cup unsalted butter
3 cloves garlic, minced
1/2 cup sour cream
1/4 cup heavy cream
1 cup cheddar cheese, shredded
1 teaspoon Old Bay seasoning
Salt and pepper to taste
2 tablespoons fresh parsley, chopped
1 lemon, cut into wedges for serving
Instructions
Preheat your oven to 400°F (200°C). Scrub the potatoes clean, prick them with a fork, and rub them with olive oil. Place them directly on the oven rack and bake for about 50 minutes, or until tender.
While the potatoes are baking, heat the butter in a large skillet over medium heat. Add the garlic and sauté until fragrant, about 1 minute.
Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Stir in the crab meat and cook for another 2 minutes. Season with Old Bay, salt, and pepper. Set aside.
Once the potatoes are done, remove them from the oven and let them cool slightly. Cut them in half lengthwise and scoop out the insides into a large bowl, leaving a small border of potato in the skins.
Add the sour cream, heavy cream, and half of the cheddar cheese to the potato insides. Mash until smooth and creamy.
Fold the seafood mixture into the mashed potatoes. Spoon the mixture back into the potato skins, dividing it evenly.
Place the stuffed potatoes on a baking sheet, sprinkle with the remaining cheese, and bake for 15 minutes, or until the cheese is melted and bubbly.
Garnish with fresh parsley and serve with lemon wedges for a zesty finish.
