Instructions

Let’s bring this dish to life with some easy-to-follow steps that will guide you from start to finish:

  1. In a large pot, heat the vegetable oil over medium heat. Stir in the flour to make a roux, and cook, stirring constantly, until it turns a deep brown color, about 10-15 minutes. This step requires patience, just like when my abuela taught me to make tortillas from scratch.
  2. Add the chicken pieces to the pot and cook until just browned. Remove and set aside.
  3. In the same pot, add the sausage slices and cook until browned. Remove and set aside with the chicken.
