- 1/2 cup cornmeal
- 1 teaspoon baking powder

- 2 large eggs
- 1/3 cup milk
- 1/4 cup chopped fresh cilantro
- 1/4 cup grated cotija cheese (or feta as a substitute)

Instructions
Follow these steps, and you’ll have a batch of delicious bites ready in no time!
- In a large bowl, combine the flour, cornmeal, baking powder, salt, cayenne pepper, and smoked paprika.
- In another bowl, whisk together the eggs and milk until well combined.
- Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid overmixing.
- Fold in the corn kernels, cilantro, and cotija cheese until evenly distributed.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Test the oil by dropping a small amount of batter into it; it should sizzle and rise to the surface.
- Scoop tablespoons of the batter into the hot oil, flattening slightly with the back of the spoon. Cook for about 2-3 minutes on each side, until golden brown and crispy.
- Remove the bites from the skillet and drain on a paper towel-lined plate.
- Serve warm, garnished with extra cilantro and a squeeze of lime for added freshness.
