  • 1/2 teaspoon smoked paprika
  • 2 large eggs
  • 1/3 cup milk
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup grated cotija cheese (or feta as a substitute)
  • Vegetable oil for frying

Instructions

Follow these steps, and you’ll have a batch of delicious bites ready in no time!

  1. In a large bowl, combine the flour, cornmeal, baking powder, salt, cayenne pepper, and smoked paprika.
  2. In another bowl, whisk together the eggs and milk until well combined.
  3. Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid overmixing.
  4. Fold in the corn kernels, cilantro, and cotija cheese until evenly distributed.
  5. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Test the oil by dropping a small amount of batter into it; it should sizzle and rise to the surface.
  6. Scoop tablespoons of the batter into the hot oil, flattening slightly with the back of the spoon. Cook for about 2-3 minutes on each side, until golden brown and crispy.
  7. Remove the bites from the skillet and drain on a paper towel-lined plate.
  8. Serve warm, garnished with extra cilantro and a squeeze of lime for added freshness.
