Ingredients
- 1 pound ground beef or turkey
- 1 cup fresh spinach, chopped
- 3 cloves garlic, minced
- 1/2 cup breadcrumbs (use gluten-free if needed)
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 ounces mozzarella cheese, cut into small cubes
- 2 tablespoons olive oil
- 1 jar marinara sauce (about 24 ounces)
If you’re looking for substitutions, you can swap the ground beef with turkey for a leaner option or use plant-based meat for a vegetarian version. The breadcrumbs can be replaced with almond flour for a low-carb alternative.
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground meat, chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, beaten egg, oregano, salt, and pepper. Mix everything well using your hands or a spatula until just combined. This step always reminds me of helping my abuela as a child, feeling the textures come together.
- Take a small handful of the meat mixture and flatten it slightly in your palm. Place a cube of mozzarella in the center, then wrap the meat around it, forming a ball. Make sure the cheese is fully enclosed to prevent it from oozing out during baking.
- Place the meatballs on the prepared baking sheet. Brush them lightly with olive oil to help them brown beautifully.
- Bake in the preheated oven for 18-20 minutes, or until the meatballs are cooked through and golden brown.
- While the meatballs are baking, heat the marinara sauce in a large skillet over medium heat.
- Once the meatballs are done, transfer them to the skillet with the marinara sauce. Let them simmer for about 5 minutes, allowing the flavors to meld together.
