Ingredients

  • 12 ounces of pasta (penne or rigatoni work well)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 5 cups fresh spinach, roughly chopped
  • 1 cup ricotta cheese
  • 1 cup marinara sauce
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional for a kick)
  • Salt and pepper to taste

Feel free to substitute the spinach with kale if you prefer, or use a blend of cheeses for added depth of flavor. My grandmother often encouraged me to follow my senses, and this recipe is no different. Personalize it as you see fit!

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.

  4. Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt and pepper to taste.
  5. In a large bowl, combine the cooked pasta, spinach mixture, ricotta cheese, marinara sauce, and half of the Parmesan and mozzarella cheeses. Mix well to combine.
  6. Transfer the mixture to a 9×13 inch baking dish, spreading it evenly.
  7. Top with the remaining cheeses and sprinkle with dried oregano and red pepper flakes if using.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
