Ingredients
- 12 ounces of pasta (penne or rigatoni work well)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 5 cups fresh spinach, roughly chopped
- 1 cup ricotta cheese
- 1 cup marinara sauce
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional for a kick)
- Salt and pepper to taste
Feel free to substitute the spinach with kale if you prefer, or use a blend of cheeses for added depth of flavor. My grandmother often encouraged me to follow my senses, and this recipe is no different. Personalize it as you see fit!
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt and pepper to taste.
- In a large bowl, combine the cooked pasta, spinach mixture, ricotta cheese, marinara sauce, and half of the Parmesan and mozzarella cheeses. Mix well to combine.
- Transfer the mixture to a 9×13 inch baking dish, spreading it evenly.
- Top with the remaining cheeses and sprinkle with dried oregano and red pepper flakes if using.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for a few minutes before serving. Enjoy the comforting flavors of this delightful bake!
