Ingredients
- 1 pound of sirloin steak, cut into bite-sized pieces
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 pound of fettuccine or your pasta of choice
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Fresh parsley, chopped, for garnish
Feel free to substitute the sirloin with ribeye or tenderloin for a different texture, and swap fettuccine with penne or spaghetti depending on your preference.
Instructions
- Season the steak pieces with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the steak bites and cook until browned on all sides, about 3-4 minutes. Transfer to a plate and set aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Stir in the heavy cream and bring to a simmer. Allow it to cook for 2-3 minutes, stirring occasionally. Gradually add the Parmesan cheese, whisking until the sauce is smooth and creamy.
- Meanwhile, cook the pasta according to package instructions. Drain and reserve a cup of pasta water.
- Add the cooked pasta to the skillet with the creamy sauce, tossing to coat. If the sauce is too thick, add some reserved pasta water until you reach the desired consistency.
- Return the steak bites to the skillet, toss to combine, and sprinkle with Italian seasoning. Cook for an additional 2 minutes to warm through.
- Garnish with chopped fresh parsley before serving.
Cooking with my abuela taught me that tasting as you go is crucial. Don’t be afraid to adjust seasonings to your liking!
