1 pound flank steak, thinly sliced
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 cup uncooked white rice
2 cups beef broth
1 cup queso blanco, melted
1/4 cup chopped cilantro (optional, for garnish)
1 lime, cut into wedges (optional, for serving)
Instructions
Begin by seasoning the sliced flank steak with salt, black pepper, and garlic powder. Let it marinate for about 15 minutes while you prepare the other ingredients.
In a medium saucepan, bring the beef broth to a boil. Add the rice, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.
Heat olive oil in a large skillet over medium-high heat. Add the marinated steak slices, cooking for 3-4 minutes on each side until nicely browned and cooked through. Remove from the skillet and let them rest for a couple of minutes.
