1 1/2 cups crushed graham crackers
1/2 cup unsalted butter, melted
24 oz cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1/2 cup sour cream
2 cups fresh strawberries, sliced
1/3 cup strawberry jam
1 cup heavy whipping cream
2 tablespoons powdered sugar
Instructions
Preheat your oven to 325°F. Grease a 9-inch springform pan and set aside.
In a bowl, combine crushed graham crackers and melted butter. Press the mixture firmly into the bottom of the prepared pan to form the crust.
In a large mixing bowl, beat cream cheese and sugar until smooth and creamy, about 3-4 minutes. Stir in vanilla extract.
Add eggs, one at a time, beating well after each addition. Mix in sour cream until just combined.
Pour the cream cheese mixture over the graham cracker crust, smoothing the top with a spatula.
Bake for 50-55 minutes, or until the center is set and the edges are lightly golden. Let it cool to room temperature before refrigerating for at least 4 hours or overnight.
