Ingredients
- 2 large cucumbers, thinly sliced
- 1 red onion, thinly sliced
- 3 ripe tomatoes, chopped
- 1/4 cup apple cider vinegar
- 2 tablespoons olive oil
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/4 cup fresh cilantro, chopped (optional)
Feel free to swap apple cider vinegar with red wine vinegar for a different tangy flavor, and if you’re not a fan of cilantro, parsley makes a great substitute!
Instructions
- In a large bowl, combine the sliced cucumbers, onions, and chopped tomatoes. Toss them gently to mix well.
- In a small bowl, whisk together the apple cider vinegar, olive oil, sugar, salt, pepper, and dried oregano until the sugar is dissolved.
- Pour the marinade over the vegetables and toss to coat evenly. Let it sit for at least 15 minutes to allow the flavors to meld together.
- Before serving, add the chopped cilantro (if using) and give it one last toss.
