Feel free to substitute the fresh parsley with dried if that’s what you have on hand, and if you’re in the mood for a twist, try adding a pinch of cumin to bring a different depth of flavor.
Instructions
- Begin by seasoning the chicken breasts with salt, pepper, paprika, garlic powder, and cayenne pepper. Let them sit for about 10 minutes to absorb the flavors. This is where my abuela’s wisdom comes in—never rush the seasoning process!
- Heat olive oil in a large skillet over medium heat. Once the oil is shimmering, add the chicken breasts. Cook for about 7-8 minutes on each side or until they are golden brown and cooked through.
- Remove the chicken from the skillet and set it aside. In the same skillet, reduce the heat to low and add half of the butter, allowing it to melt slowly.
- Stir in the fresh lemon juice and parsley, creating a fragrant butter sauce that will coat the chicken beautifully.
- Return the chicken to the skillet, spooning the butter sauce over the top. Let it simmer for another 3-4 minutes to ensure the chicken is well-coated and flavorful.
- Finish by adding the remaining butter, allowing it to melt into the sauce. Serve immediately, garnishing with additional parsley if desired.
