Ingredients

  • 12 ounces linguine
  • 2 tablespoons olive oil
  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup chopped fresh parsley
  • 1/2 cup grated Parmesan cheese
  • Optional: Substitution for chicken – shrimp or tofu for a different protein twist

Instructions

  1. Begin by cooking the linguine according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, smoked paprika, chili powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
  3. Remove the chicken from the skillet and set aside. In the same skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Stir in the lemon juice, Dijon mustard, and red pepper flakes. Let the sauce simmer for 2-3 minutes to meld the flavors.
  5. Return the chicken to the skillet, and toss with the linguine until well coated. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  6. Sprinkle with fresh parsley and Parmesan cheese before serving, just as my abuela would sprinkle her love over every dish.
