12 ounces linguine
2 tablespoons olive oil
1 pound chicken breast, cut into bite-sized pieces
1 teaspoon smoked paprika
1/2 teaspoon chili powder
Salt and pepper, to taste
1/2 cup unsalted butter
4 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon red pepper flakes
1/4 cup chopped fresh parsley
1/2 cup grated Parmesan cheese
Optional: Substitution for chicken – shrimp or tofu for a different protein twist
Instructions
Begin by cooking the linguine according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, smoked paprika, chili powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
Remove the chicken from the skillet and set aside. In the same skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
Stir in the lemon juice, Dijon mustard, and red pepper flakes. Let the sauce simmer for 2-3 minutes to meld the flavors.
Return the chicken to the skillet, and toss with the linguine until well coated. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
Sprinkle with fresh parsley and Parmesan cheese before serving, just as my abuela would sprinkle her love over every dish.
