Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 package of refrigerated biscuit dough (8 biscuits)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F and bake the biscuits according to the package instructions. Once baked, set them aside to cool slightly.
  2. In a large skillet over medium heat, add the olive oil and minced garlic. Sauté until fragrant, about 1 minute.
  3. Add the shrimp to the skillet, season with salt and pepper, and cook until they turn pink and opaque, about 3-4 minutes. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, pour in the heavy cream and bring it to a gentle simmer. Stir in the Parmesan, mozzarella, and feta cheeses, allowing them to melt and create a smooth sauce. If the sauce is too thick, add a bit more cream to reach your desired consistency.
  5. Return the shrimp to the skillet, tossing them in the Alfredo sauce to coat well. Remove from heat.
  6. Slice the biscuits in half horizontally. Place a spoonful of the shrimp Alfredo mixture on the bottom half of each biscuit, then top with the other half. You might recall how my abuela would stack tortillas with layers of fillings—this is a similar concept but with a cheesier twist!
  7. Garnish with fresh parsley and, if desired, a sprinkle of crushed red pepper flakes for a touch of heat.
