Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2/3 cup unsalted butter, melted
- 2 cups packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup butterscotch chips
Feel free to swap out the butterscotch chips for chocolate chips or nuts if you’re feeling adventurous, just like I did during my experimental kitchen sessions in Charleston.
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan. I like using parchment paper for easy cleanup.
- In a medium bowl, whisk together the flour, baking powder, and salt. This step reminds me of the meticulous care my grandmother showed when baking.
- In a separate large bowl, mix the melted butter and brown sugar until smooth. Add eggs and vanilla extract, stirring until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid overmixing to keep the bars tender.
- Fold in the butterscotch chips, reserving a few for sprinkling on top.
- Spread the batter evenly into the prepared pan and sprinkle with the reserved butterscotch chips.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for at least 10 minutes before cutting into bars. This is the perfect time to savor the sweet aroma wafting through your kitchen.
