Learn how to make delicious Tropical Pineapple-Glazed Chicken. Easy recipe with step-by-step instructions.
Total Time:45 minutes
Yield:4 servings
Ingredients
4 boneless, skinless chicken breasts
1 cup pineapple juice
1/3 cup soy sauce
1/4 cup brown sugar
2 tablespoons honey
1 tablespoon grated fresh ginger
2 cloves garlic, minced
1 tablespoon cornstarch
2 tablespoons water
Salt and pepper to taste
1 tablespoon olive oil
Fresh pineapple slices for garnish (optional)
Chopped fresh cilantro for garnish (optional)
Instructions
Begin by seasoning the chicken breasts with salt and pepper. Set them aside while you prepare the glaze.
In a medium saucepan, combine the pineapple juice, soy sauce, brown sugar, honey, grated ginger, and minced garlic. Bring the mixture to a gentle simmer over medium heat, stirring occasionally.
In a small bowl, mix the cornstarch with water to create a slurry. Slowly whisk this into the simmering sauce, allowing it to thicken slightly. Remove from heat and set aside.
Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 5-6 minutes on each side, or until they are golden brown and cooked through. My abuela always taught me to listen to the sizzle — it’s music to a cook’s ears!
Once the chicken is cooked, pour the pineapple glaze over the chicken, ensuring each piece is well-coated. Let the chicken simmer in the glaze for another 2-3 minutes to absorb the flavors.
Garnish with fresh pineapple slices and chopped cilantro if desired. Serve hot and enjoy!
