Learn how to make delicious Tropical Pineapple-Glazed Chicken. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/3 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh pineapple slices for garnish (optional)
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Begin by seasoning the chicken breasts with salt and pepper. Set them aside while you prepare the glaze.
  2. In a medium saucepan, combine the pineapple juice, soy sauce, brown sugar, honey, grated ginger, and minced garlic. Bring the mixture to a gentle simmer over medium heat, stirring occasionally.
  3. In a small bowl, mix the cornstarch with water to create a slurry. Slowly whisk this into the simmering sauce, allowing it to thicken slightly. Remove from heat and set aside.
  4. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 5-6 minutes on each side, or until they are golden brown and cooked through. My abuela always taught me to listen to the sizzle — it’s music to a cook’s ears!
  5. Once the chicken is cooked, pour the pineapple glaze over the chicken, ensuring each piece is well-coated. Let the chicken simmer in the glaze for another 2-3 minutes to absorb the flavors.
  6. Garnish with fresh pineapple slices and chopped cilantro if desired. Serve hot and enjoy!
