Ingredients
2 pounds beef chuck, cut into 1-inch cubes
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
2 carrots, sliced
2 stalks celery, diced
1 red bell pepper, chopped
1 (28-ounce) can diced tomatoes
1 cup beef broth
1/2 cup red wine (optional, but recommended for depth of flavor)
2 teaspoons dried oregano
1 teaspoon dried rosemary
1 teaspoon salt
1/2 teaspoon black pepper
1 bay leaf
1/4 cup chopped fresh parsley
Grated Parmesan cheese, for serving
Instructions
Preheat your oven to 325°F (160°C).
In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove and set aside.
In the same pot, add the chopped onion, cooking until translucent, about 5 minutes. Stir in the garlic and cook for another minute.
Add the carrots, celery, and red bell pepper to the pot, cooking until they begin to soften, about 5-7 minutes.
Return the beef to the pot, along with any juices. Pour in the diced tomatoes, beef broth, and red wine if using. Stir in the oregano, rosemary, salt, pepper, and bay leaf.
Bring the mixture to a gentle boil, then cover with a lid and transfer to the preheated oven. Bake for 2 to 2.5 hours, or until the beef is tender and the flavors have melded beautifully.
Remove from the oven and discard the bay leaf. Stir in the fresh parsley.
