Ingredients
4 slices of sourdough bread
1 ripe avocado, sliced
1 large tomato, sliced
4 slices of cheddar cheese
2 tablespoons of butter, softened
1 tablespoon of mayonnaise
Salt and pepper to taste
Optional: a sprinkle of red pepper flakes for a kick
Instructions
Start by spreading a thin layer of mayonnaise on one side of each slice of bread. This will ensure an extra crispy crust when grilled.
On the un-mayonnaised side, layer one slice of cheese, followed by avocado slices. Season with a pinch of salt and pepper.
Add tomato slices, another slice of cheese, and a sprinkle of red pepper flakes if you like a little heat.
Top with the second slice of bread, mayonnaise side out.
In a large skillet, melt butter over medium heat. Place the sandwiches in the skillet, cooking for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
