1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 pound ground beef (or turkey for a lighter option)
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper to taste
1 can (14.5 ounces) diced tomatoes
1 can (15 ounces) kidney beans, rinsed and drained
2 cups chicken broth
1 1/2 cups elbow macaroni
2 cups shredded cheddar cheese
1/4 cup chopped fresh cilantro (optional)
Instructions
Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
Add the ground beef to the skillet, using a wooden spoon to break it apart as it cooks. Season with chili powder, cumin, paprika, salt, and pepper.
Once the beef is browned, stir in the diced tomatoes and kidney beans, combining everything thoroughly.
Pour in the chicken broth and bring the mixture to a gentle simmer. Add the elbow macaroni, stirring to combine.
Cover the skillet and let it cook for about 12-15 minutes, or until the macaroni is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
Reduce heat to low and sprinkle the shredded cheddar cheese over the top. Cover until the cheese melts, about 2-3 minutes.
