Ingredients
1 pound boneless, skinless chicken breast, sliced into thin strips
2 cups broccoli florets
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup soy sauce (or tamari for gluten-free)
2 tablespoons honey
1 tablespoon rice vinegar
1/4 teaspoon red pepper flakes (optional for heat)
Salt and pepper to taste
1 tablespoon sesame seeds (optional for garnish)
2 green onions, sliced (optional for garnish)
Instructions
Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil.
Once the oil is hot, add the sliced chicken. Season with salt and pepper and cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
Add the broccoli florets to the skillet, stirring to combine with the garlic and ginger. Cook for 5 minutes until the broccoli is bright green and tender-crisp.
In a small bowl, whisk together the soy sauce, honey, rice vinegar, and red pepper flakes.
Return the chicken to the skillet, pouring the sauce over the chicken and broccoli. Stir well to coat all the ingredients evenly.
Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
Garnish with sesame seeds and sliced green onions if desired. Serve hot and enjoy!
