- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 1 1/2 cups whole milk
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, sliced
- 1/2 cup semi-sweet chocolate chips
- 1 tablespoon powdered sugar (optional, for dusting)
- 1 tablespoon vegetable oil or additional butter for the pan
If you’re feeling adventurous, swap out the semi-sweet chocolate chips for dark chocolate or even white chocolate. And if strawberries aren’t in season, raspberries or sliced bananas make excellent substitutes.
Instructions
- In a medium mixing bowl, whisk together the flour, sugar, and salt. This dry base will ensure a smooth batter.
- In another bowl, combine the milk, eggs, melted butter, and vanilla extract. Mix until well blended.
- Gradually add the wet ingredients to the dry ingredients, whisking continuously to avoid any lumps. Let the batter rest for about 20 minutes to allow the flour to absorb the liquid fully.
- Heat a non-stick skillet over medium heat and lightly coat it with vegetable oil or butter. The key to a perfect crepe is a well-heated pan.
- Pour about 1/4 cup of batter into the pan, swirling it to cover the bottom evenly. Cook for about 1-2 minutes until the edges start to lift and the bottom is golden brown.
- Flip the crepe gently using a spatula and cook the other side for another minute. Repeat with the remaining batter, oiling the pan as necessary.
- Once all crepes are cooked, fill each one with a handful of sliced strawberries and a sprinkle of chocolate chips. Roll them up or fold them into quarters.
- Dust with powdered sugar before serving, if desired.
