Ingredients
- 2 large boneless, skinless chicken breasts
- 1 cup Italian breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 2 eggs, beaten
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- Olive oil spray
Feel free to substitute regular breadcrumbs with panko for an extra crispy texture. For a gluten-free option, consider using gluten-free breadcrumbs.
Instructions
- Preheat your air fryer to 370°F (190°C). This step is crucial as it ensures the chicken starts cooking immediately, giving you that perfect golden crust.
- Slice each chicken breast in half lengthwise to create four thinner pieces. This helps the chicken cook evenly and quickly.
- In a shallow dish, combine the Italian breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, and basil. In another dish, beat the eggs.
- Dip each chicken piece first in the beaten eggs, then into the breadcrumb mixture, ensuring an even coat. Press gently to help the breadcrumbs adhere.
- Lightly spray the air fryer basket with olive oil spray and place the breaded chicken pieces inside. Make sure they’re not overcrowded to allow even cooking.
- Cook for about 10 minutes, then flip the chicken pieces and continue cooking for another 8-10 minutes or until the internal temperature reaches 165°F (74°C).
- Remove the chicken, top each piece with marinara sauce and shredded mozzarella cheese, then return to the air fryer for an additional 2-3 minutes, allowing the cheese to melt beautifully.
- Once done, remove from the air fryer and let it rest for a few minutes before serving. This resting time allows the juices to redistribute, keeping the chicken moist.
Tip from my kitchen to yours: Use a meat thermometer to ensure the chicken is perfectly cooked without overcooking it. It’s a small step that makes a big difference!
