Ingredients
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar, packed
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup apple cider
1/2 cup unsalted butter, melted and cooled
2 large eggs
1 teaspoon vanilla extract
1/4 cup milk
For the cinnamon sugar crust: 1/4 cup granulated sugar and 1 teaspoon ground cinnamon
Instructions
Preheat your oven to 350°F (175°C). Grease a standard loaf pan and set aside.
In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon.
In another bowl, combine the apple cider, melted butter, eggs, vanilla extract, and milk. Mix until well combined.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix as this can make the loaf dense.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
In a small bowl, mix the cinnamon sugar crust ingredients and sprinkle evenly over the batter.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. My grandmother always said to trust the aroma as a good indicator that it’s done!
Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
