2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream
2 cups peeled and chopped apples (Granny Smith or Honeycrisp work well)
1 cup chopped pecans
For the caramel glaze: 1/2 cup packed brown sugar, 1/4 cup butter, 2 tablespoons milk, 1/2 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F. Grease a 9×13-inch baking pan and set aside.
In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the flour mixture to the butter mixture, alternating with sour cream, beginning and ending with the flour mixture. Mix until just combined.
Fold in the chopped apples and pecans until evenly distributed.
Pour the batter into the prepared baking pan, smoothing the top with a spatula.
Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. As the cake bakes, prepare the caramel glaze.
For the glaze: In a small saucepan, combine the brown sugar, butter, and milk over medium heat. Bring to a simmer and cook for 2 minutes, stirring constantly. Remove from heat and stir in the vanilla extract.
Once the cake is done, let it cool in the pan for about 10 minutes. While still warm, pour the caramel glaze over the cake, spreading it evenly with a spatula.
