- 1/4 cup white vinegar
- 1/4 cup orange juice
- 2 tablespoons brown sugar
- 1 bunch of green onions, chopped
- 1 tablespoon fresh thyme leaves
- 1 tablespoon ginger, grated
- 1 lime, juiced
- Salt to taste
Feel free to substitute Scotch bonnet peppers with habanero peppers if they’re easier to find. Both provide that fiery kick essential to authentic jerk chicken.
Instructions
- Begin by toasting the allspice berries and black peppercorns in a dry skillet over medium heat for 2-3 minutes until fragrant. This step brings out the essential oils, enhancing the flavor profile.
- Grind the toasted spices using a mortar and pestle or spice grinder. Combine them with nutmeg and cinnamon in a large bowl.
- Add minced garlic, chopped Scotch bonnet peppers, soy sauce, white vinegar, orange juice, brown sugar, green onions, thyme, ginger, lime juice, and salt. Mix well to form a marinade.
- Place the chicken pieces in a large resealable plastic bag and pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag and refrigerate for at least 4 hours, preferably overnight, allowing the flavors to meld beautifully.
- Preheat your grill to medium-high heat. While it heats, take the chicken out of the refrigerator and let it sit at room temperature for about 20 minutes. This helps the chicken cook evenly.
- Grill the chicken, skin side down first, for 6-8 minutes on each side, or until the internal temperature reaches 165°F. You’ll want the skin to be crispy and slightly charred.
- Let the chicken rest for 5 minutes before serving. This resting period ensures the juices redistribute, keeping the meat tender and juicy.
