1 pound boneless, skinless chicken breasts, cut into strips
2 tablespoons olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
8 ounces mushrooms, sliced
1 cup chicken broth
1 cup sour cream
2 tablespoons all-purpose flour
1 teaspoon paprika
Salt and pepper to taste
8 ounces egg noodles, cooked and drained
1/4 cup fresh parsley, chopped (optional, for garnish)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
Heat olive oil in a large skillet over medium heat. Add the chicken strips and cook until golden brown on all sides, about 5-7 minutes. Remove the chicken and place it in the prepared baking dish.
In the same skillet, add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes. Add the sliced mushrooms and continue to cook until they are tender.
Sprinkle the flour over the mushroom mixture, stirring to coat. Gradually pour in the chicken broth, stirring constantly until the mixture thickens.
