Ingredients
12 ounces pasta of your choice (I prefer penne or fusilli for their ability to hold the sauce well)
2 pints cherry tomatoes
8 ounces block of feta cheese
1/4 cup extra-virgin olive oil
4 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
Salt and pepper to taste
Fresh basil leaves, for garnish
Optional: Zest of one lemon for an extra zing
Instructions
Preheat your oven to 400°F (200°C). This is a great time to gather all your ingredients and get everything ready.
In a baking dish, place the block of feta cheese in the center. Surround it with cherry tomatoes, making sure they are evenly distributed.
Drizzle the olive oil over the feta and tomatoes. Sprinkle with minced garlic, oregano, red pepper flakes, salt, and pepper. Toss the tomatoes gently to coat them in the oil and spices.
Bake in the preheated oven for about 30 minutes, or until the tomatoes have burst and the feta is golden and soft.
Meanwhile, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
Remove the baking dish from the oven. Using a fork, mash the feta and tomatoes together, creating a creamy sauce. If the sauce seems too thick, add a little reserved pasta water to reach your desired consistency.
Toss the cooked pasta with the sauce until well coated. Adjust seasoning if necessary. Stir in some fresh basil leaves and lemon zest if using.
