Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed
- 1 cup semi-sweet chocolate chips
- 1/2 cup chopped walnuts (optional)
Feel free to substitute whole wheat flour for a healthier twist or use dark chocolate chips for a deeper flavor profile. If you’re feeling adventurous, adding a sprinkle of cinnamon can elevate the aroma and taste.
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, combine the melted butter and sugar, whisking until smooth. Add the eggs and vanilla extract, mixing until well combined.
- Stir in the mashed bananas, ensuring they’re fully incorporated into the batter.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix, as this can make the bread dense.
- Fold in the chocolate chips and walnuts, if using, distributing them evenly throughout the batter.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown and slightly cracked.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Baking is an art of patience, something I learned while waiting for the perfect rise in my abuela’s tortillas. Trust the process, and you’ll be rewarded with a loaf that’s crispy on the outside and tender on the inside.
