Ingredients

  • 3 ripe bananas, mashed
  • 2 cups rolled oats
  • 1/2 cup almond butter (or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup chocolate chips (optional)

Feel free to substitute almond butter with your favorite nut or seed butter, and if walnuts aren’t your thing, swap them out for pecans or leave them out entirely. As with all my recipes, I encourage you to make it your own!

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, allowing some overhang on the sides for easy removal.
  2. In a large mixing bowl, combine mashed bananas, almond butter, honey, and vanilla extract. Stir until the mixture is smooth and well combined.
  3. Add in the rolled oats, cinnamon, and salt. Stir until all ingredients are incorporated, and the mixture is evenly moist.
  4. If using, fold in the chopped walnuts and chocolate chips. This step always reminds me of sneaking chocolate chips into my abuela’s cookie dough, adding a bit of childhood mischief to the mix.
  5. Pour the mixture into the prepared baking pan, spreading it out evenly with a spatula.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the edges pull away slightly from the sides of the pan.
  7. Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper and transfer to a wire rack to cool completely before slicing.

Remember, the beauty of home cooking is in its imperfections, so don’t stress if things don’t look perfect—they’ll taste amazing regardless.
