Ingredients
2 cups old-fashioned oats
1 cup mashed ripe bananas (about 2 large bananas)
1/2 cup almond butter (or any nut butter of your choice)
1/4 cup honey (or maple syrup for a vegan option)
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup chopped nuts (such as walnuts or pecans, optional)
1/4 cup dark chocolate chips (optional, but recommended for a touch of indulgence)
Instructions
Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
In a large mixing bowl, combine the mashed bananas, almond butter, honey, and vanilla extract. Stir until smooth and well blended.
Add the oats, cinnamon, and salt to the bowl, stirring until all the ingredients are fully incorporated. If using, fold in the chopped nuts and chocolate chips.
Pour the mixture into the prepared baking dish, using a spatula to spread it evenly and press it down firmly.
