Ingredients
1.5 pounds chicken breast, cut into 1-inch cubes
1/2 cup mayonnaise
1/4 cup sweet chili sauce
2 tablespoons Sriracha sauce (adjust for spice preference)
2 tablespoons soy sauce
1 tablespoon honey
2 cloves garlic, minced
1 tablespoon freshly grated ginger
1 tablespoon lime juice
1 tablespoon vegetable oil
Salt and pepper to taste
Chopped cilantro for garnish
Lime wedges for serving
Instructions
In a medium bowl, combine mayonnaise, sweet chili sauce, Sriracha, soy sauce, honey, garlic, ginger, lime juice, and vegetable oil. Stir well to create a marinade.
Add the chicken cubes to the marinade, making sure each piece is well coated. Cover and refrigerate for at least 30 minutes, or overnight for deeper flavor.
Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 15 minutes to prevent burning.
Thread the marinated chicken onto the skewers, about 4-5 pieces per skewer.
Grill the skewers for about 5-7 minutes per side, or until the chicken is cooked through and has nice grill marks. Be sure to turn them gently to avoid sticking.
