Ingredients
- 1 pound boneless, skinless chicken breast, cut into 1-inch cubes
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 2 tablespoons sriracha sauce
- 1 tablespoon honey
- 2 tablespoons lime juice
- 2 garlic cloves, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh cilantro, chopped (for garnish)
- Wooden skewers, soaked in water for 30 minutes
Feel free to swap the chicken for shrimp if you’re in the mood for seafood. For a vegetarian twist, tofu makes a great substitute as well!
Instructions
- In a bowl, combine the mayonnaise, sweet chili sauce, sriracha sauce, honey, lime juice, and minced garlic. Mix well until smooth.
- Add salt and pepper to taste, then reserve half of this mixture as your dipping sauce.
- In a separate bowl, toss the chicken cubes with olive oil and coat them with the remaining sauce. Let them marinate for at least 30 minutes to absorb all the flavors.
- Preheat your grill to medium-high heat. While it heats, thread the marinated chicken cubes onto the soaked wooden skewers.
- Grill the skewers for 5-7 minutes on each side, or until the chicken is cooked through and has a nice char.
- Once done, remove from the grill and let them rest for a couple of minutes. This helps the juices redistribute, making them even more succulent.
- Before serving, garnish with freshly chopped cilantro and serve with the reserved dipping sauce on the side.
