Ingredients

  • 1 pound boneless, skinless chicken breast, cut into 1-inch cubes
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha sauce
  • 1 tablespoon honey
  • 2 tablespoons lime juice
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh cilantro, chopped (for garnish)
  • Wooden skewers, soaked in water for 30 minutes

Feel free to swap the chicken for shrimp if you’re in the mood for seafood. For a vegetarian twist, tofu makes a great substitute as well!

Instructions

  1. In a bowl, combine the mayonnaise, sweet chili sauce, sriracha sauce, honey, lime juice, and minced garlic. Mix well until smooth.
  2. Add salt and pepper to taste, then reserve half of this mixture as your dipping sauce.
  3. In a separate bowl, toss the chicken cubes with olive oil and coat them with the remaining sauce. Let them marinate for at least 30 minutes to absorb all the flavors.
  4. Preheat your grill to medium-high heat. While it heats, thread the marinated chicken cubes onto the soaked wooden skewers.
  5. Grill the skewers for 5-7 minutes on each side, or until the chicken is cooked through and has a nice char.
  6. Once done, remove from the grill and let them rest for a couple of minutes. This helps the juices redistribute, making them even more succulent.
  7. Before serving, garnish with freshly chopped cilantro and serve with the reserved dipping sauce on the side.
