1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
1/2 cup BBQ sauce (your favorite kind, or homemade if you’re feeling adventurous)
2 tablespoons olive oil
1 tablespoon soy sauce
1 tablespoon honey
1 teaspoon smoked paprika
1 teaspoon garlic powder
Salt and pepper to taste
8 wooden skewers, soaked in water for 30 minutes
4 cups mixed salad greens (I love a mix of romaine and arugula for that peppery kick)
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1 cucumber, sliced
1/4 cup crumbled feta cheese (optional, but very delicious)

Instructions
In a large bowl, combine the BBQ sauce, olive oil, soy sauce, honey, smoked paprika, garlic powder, salt, and pepper. Stir well to create a marinade.
Add the chicken cubes to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.
Preheat your grill to medium-high heat. While it heats, thread the marinated chicken onto the soaked wooden skewers.
Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char. My abuela always said the secret was in the turning — make sure you keep a close eye on them!
In a large salad bowl, toss together the mixed greens, cherry tomatoes, red onion, and cucumber. Arrange the grilled chicken skewers on top.
